Trying a new brand of Brown rice pasta.. brand name Tinkyada. I am scared. You cook it for two minutes boiling and then remove from heat covered for 20 min. I have never cooked pasta this way. I hope I don't ruin spaghetti night for the kids because of this.

Chex mix, everything free. No gluten, milk, soy, nuts... and it is easy!

Guava Check
Mix
1/2 Cup Coconut
Oil
1/2 Cup Raw
Cane Sugar (Turbinado)
1/2 Cup Agaves
Nectar
Boil 2 min
Take off heat
Add:
1/4 tea baking
soda
1/4 tea
vanilla
a few
sprinkles of sea salt
Pour over a
total of 1 box of chex cereal (1/2 rice 1/2corn, with some gorilla munch or
whatever)
Note: wheat
chex go soggy if you use them.
You can add
coconut, Dried fruit, What ever else
sounds good
****I did not have raw sugar when I made this so I used a little more then 1/4 c regular sugar. It worked well. Raw sugar is not as strong as processed so figured it was about 3/4 to 1 cup to substitute
I added only the coconut and it was delicious. My husband snacked on it and he is the biggest skeptic about this stuff and refuses to admit anything tastes good. So in my book this is OKAY!
Awesome Caesar Salad Dressing:
2 eggs
2-3 cloves garlic
1/3 cup Vinager
6 shakes pepper
12 shakes of salt
1 Cup olive oil.
Mix first 5 ingredients in your blender on high until well mixed. Then turn on blender to a high steady speed and drizzle in the olive oil slowly, but steady. It is the key to making the dressing turn out. Blend well, The consistency should be thick and creamy.
Yay! I loved this recipe! It is so good and my kids love it. And easy to do. It keeps for 2 weeks max. You can use it to marinade chicken in. As a breadstick dipping sauce, and as a pizza sauce with chicken and onions... So good. Enjoy

The Plan
I am going to post my meals that I eat and my weekly schedule of meals for the following week. Some things are going to be new recipes and most not. So as I try them I will post things that worked and things that did not.. As most know when it comes to gluten free, and for us soy and tree nut free, not everything we try works for our family.
This week so far we ate:
Saturday, : Spaghetti, Garlic Bread, Ceasar salad: I use Bertolli organic Spaghetti sauce, (even with out being organic they are all good. No soy or gluten) I love this because I can use vertially no seasoning at it tastes delicious. But I can doctor it up too. For the noodles I use Jovial, brown rice pasta. It is the only kind my kids and I will eat. Trust me I have tried alot of kinds, This is a good one, but caution!!! do not over cook. Follow the instructions to the minute. Every minute counts when it comes to gluten free pasta.
I have found a good bakery Locally here in Sandy, Ut called Eleanor's and their bread is edible and quite good. My son will eat it YAY! It is 6.99 a loaf so pricey so I use this for the garlic bread for him and we use regular loaf of bread. And ceasar salad.. if your kids eat salad. it is a great fall back meal.
Sunday: BBq Ribs, Corn on the cob, Salad with homemade ranch dressing, and Fruit salad. The BBq sauce was sweet baby rays. I know some sauces have gluten in them, I have not yet mastered what these are because they are not specified on Labels.. So use what works for your family.
Monday: Trout, Quinoa, Asparagus and Fruit. This was my first try with Quinoa and I really liked it. I substituted it for the rice. Cooked it with Swanson chicken broth rather then water and when it was done I added salt pepper and garlic powder. My kids ate it and more surprisingly my Husband did! Let me tell you that was an accomplishment. Any fish would have been great with this meal if your family eats fish.
And Tonight I needed a quick kid dinner, so I made Hot dogs (Minus the bun), Carrots, oranges and apples. The Hot dogs are Oscar Meyer select. These don't contain Nitrates, and that is big for us because they dont have soy and as far as I know gluten. They taste good, some of the fancy ones at the health food store taste like crap, and that is no fun!!!
Anyhow, I will post recipes of my meals soon and Pics so this blog will not bore anyone too bad..
And tomorrow I am going grocery shopping and making a week meal plan. Look for that.
